Brinjal Fry (eggplant stir fry) is delicious, flavorful, and can be made in less than 20 minutes.
In a bowl, add all the ingredients except oil & Mix well. Keep it aside.
Coat the slices one by one in the mixture.
Wash the brinjal & slice it into medium-thick pieces in a pan, heat soybean oil.
Add the coated brinjals & cook both sides in low to medium flame.
